#27 Sunday Sounds - White Chocolate and Raspberry Blondies








I've really been trying to get into baking recently and I absolutely love anything with white chocolate so decided to bake some white chocolate and raspberry blondies last weekend, which were delicious even if I do say so myself.

For the ingredients all you will need is:
-150g white chocolate 
-100g butter 
-3 eggs 
-175g caster sugar 
-1 tsp vanilla essence 
-200g self raising flour 
-1 tsp baking powder
-175g raspberries 
-75g white chocolate for decoration

To make:
1. Turn the oven to around 180c, 350f or gas mark 4 and line a baking tray with non stick baking paper.
2. Melt the white chocolate with the butter either slowly in a microwave or in a bowl over a pan of simmering water. 
3. Whilst you're waiting for the chocolate and butter to melt, whisk the eggs, sugar and vanilla essence in a seperate bowl with an electric whisk until the mix is lovely and thick and leaves a trail when the whisk is lifted up. 
4. Gently fold the chocolate mixture into the egg mixture and then slowly add the flour and baking powder and gently mix together. 
5. Pour the mix into your baking tray and then drop the raspberries all over the mix. Put into the oven for around 30-35 minutes. The top should be crusty and golden and the centre still a bit a doughy/soft. 
6. Leave the blondies to cool and then drizzle with melted chocolate. 

These went down a real treat in my house and as they contain raspberries they're healthy right?
